Here's a picture of Lilly after the baptism in a new dress that Grandpa Peterson gave her for her birthday. (It came with a matching dress for her baby doll as well.)

We were so pleased to have so many family members be able to attend and participate in Lilly's baptism. Aunt Bonnie played the piano, Geoffrey recited a scripture and told Lilly how much he loved her, Rachael sang a song Grandma Sharon wrote, and Jason and Grandma Phylis gave a talk. We had cookies and milk for everyone afterwards. And since I was asked by so many for the recipes I will post them here on the blog. Yum--Cookies!
For all of these cookies-don't over bake. Take them out when the edges are set but the centers are still soft and puffy. Let them sit on the baking sheet a few minutes before moving to a wire rack.
Chocolate Malted Cookies
1 cup butter flavored shortening
1 1/4 cups packed brown sugar
1/2 cup malted milk powder
2 T chocolate syrup (or I use 2 T cocoa powder)
1 T vanilla
1 egg
2 cups flour
1 t baking soda
1/2 t salt
1 1/2 cup semi sweet chocolate chunks
1 cup milk chocolate chips
Combine first five ingredients, mix then add egg. Add dry ingredients and stir in chips and chunks. Shape and bake at 375 for 12-14 minutes.
Molasses Spice
1/3 cups sugar plus 1/2 cups sugar
2 1/4 cups flour
1 t baking soda
1 1/2 t ground cinnamon
1 1/2 t ground ginger
1/2 t ground cloves
1/4 t ground allspice
1/4 t salt
12 T butter
1/3 cups dark brown sugar
1 egg yolk
1 t vanilla
1/2 cup molasses
Beat butter, brown sugar and 1/3 cup granulated sugar, add egg yolk and vanilla. Add molasses and then dry ingredients. Shape and roll in remaining 1/2 cup sugar. Bake at 375 for 10-12 minutes.
Triple Chocolate Cookies
2 cups flour
1/2 cup Dutch processed cocoa powder
2 t baking powder
3/4 t salt
4 large eggs
2 t vanilla
10 T butter
1 1/2 cups light brown sugar
1/2 cups granulated sugar
16 ounces semisweet or dark chocolate melted and cooled
2 cups white chocolate or semisweet chocolate chips
(Sometimes we add dried cherries, or dried cranberries, or almond extract)
Beat butter and sugars until light and fluffy and egg and vanilla. Beat in melted chocolate and add dry ingredients. Stir in chips. Cover bowl and let sit at room temperature for 30 minutes. Shape cookies and bake at 350 degrees for 10-12 minutes.
Chocolate Shavings Oatmeal Cookies with Dried Cherries
1 1/4 cups flour
3/4 t baking powder
1/2 t baking soda
1/2 t salt
1 1/4 Cups old fashioned rolled oats
1 cup pecans coarsely chopped--I used Walnuts
1 cup dried sour cherries, chopped coarse
4 ounces bittersweet or dark chocolate, chopped fine
12 T butter
1 1/2 cups packed dark brown sugar
1 large egg
1 t vanilla
Beat butter and sugar until fluffy, add egg and vanilla, add dry ingredients and gradually mix in remaining ingredients. Bake at 350 degrees 15-20 minutes.
Snickerdoodles
1 3/4 cups sugar
1 T cinnamon
2 1/2 cups flour
2 t cream of tartar
1 t baking soda
1/2 t salt
8 T butter
1/2 cup vegetable shortening
2 large eggs
Beat butter, shortening and 1 1/2 cups sugar until fluffy, add egg. Add dry ingredients. Combine 1 3/4 cups sugar and the cinnamon in a small bowl. Shape cookies and roll in sugar/cinnamon mixture. Bake at 375 for 10-12 minutes.
Oatmeal Chocolate and Butterscotch Chip
1 cup butter flavor shortening
1 cup brown sugar
1 cup sugar
2 eggs
1 t vanilla
1 cups flour
1/2 t baking soda
1/2 t salt
1 t cinnamon
1/2 t ground cloves
1/2 t ground ginger
3 cups quick cooking oats or old fashioned oats pulsed in a blender or food processor
1 cup Chocolate chips
1 cup Butterscotch chips
Mix shortening and sugar until fluffy, add eggs and vanilla. Add dry ingredients. Add oatmeal and chips. Bake at 350 degrees for 12-15 minutes.
Low Fat Melon and Low Fat Pineapple Cookies
Cut up melons and pineapple to LOOK like cookies. Fake yourself out and pretend. Maybe not quite as tasty but much better for you.
